Wild Blueberry Pie Filling
This Wild Blueberry Pie Filling has just four ingredients and bakes in 30 minutes! An ode to one of my favorite recipe creators, Anthony Williams, as the Medical Medium. He boasts that wild blueberries are superfoods that have adapted and thrived for thousands of years. Their resiliency has been shown throughout history as wild blueberries survived fires, burning to the ground, and coming back better than before!
Frozen Wild Blueberries
It's often easy to find wild blueberries in the frozen-food section of your local grocer. Blueberries differ from other frozen fruits as they do not lose their nutritional value. I buy Wymans, and beyond making this pie, I use them in smoothies, as topping in oatmeal, or mixed in with pancakes. With how good they are, I'm sure you'll find the perfect use in your kitchen.
I lucked out with my grocer supplying pie crusts from a local bakery, and they're not only vegan but gluten-free. I chose peace and bought two prepared crusts for this recipe. I'm not a baker simply because I don't enjoy baking, and I probably won't create many recipes in the baked goods section. I don't find an immense reward at the end, not having a sweet tooth and all, and it just seems easier to thank someone else for crafting a crust.
A crumble topping would be great for this recipe! I crafted a lattice-inspired design but note that the filling bubbles in the oven and picture-perfect isn't always attainable.
I hope you enjoyed this shared recipe from Medical Medium. More importantly, I hope you enjoy incorporating wild blueberries, and if you're interested in learning more, Anthony's book Life-Changing Foods is highly recommended.
