Arizona is HOT and keeping hydrated is always on my mind. Beyond the heat, many people's baseline hydration status is not so hot. Alas, dehydration plagues the masses. Cucumbers are 95% water so they get a first prize at the hydration station.
I enjoy plain cucumber juice in the mornings as a way to reset from the night. If plain isn't your jam adding the juice of lime usually makes it go down easier. I have a Champion juicer; I chose it for its lifetime warranty and the fact it's a big motor rotating at 1725 RPM. Champion has been in business for over 60 years and these things last forever since the parts are easy to replace. The downside is that it's heavy, not too heavy to lift and move, but heavy enough to make me reconsider lugging it out from the bottom cupboard midday for some juice.
This minty cucumber refresher doesn't need a juicer unless you'd like to, that's no problem. What makes this mocktail simple is throwing all the ingredients into the blender and straining it through a fine-mesh sieve over ice.
Gather the Mint
If you're like me, there's a robust pot of mint somewhere near your kitchen begging to be used. I typically add it to my smoothies or steep it for an after-dinner tea. My palate says cucumber and mint are a match made in heaven, add in lime and this trio deserves a fancy glass and an oversized ice cube.
