This is my Go-To Avocado Toast Recipe, a brunch I make many times per week. This meal is enjoyable due to the limitless variations and combinations available. With just one ripe avocado and a slice of bread, you're on your way to enjoying the most popular brunch option of the decade!
Topping the toast with veggies and spices brings delicious varieties in flavor. It's also a great way to try produce items you typically wouldn't, like watermelon radish, pictured here!

What you need for the perfect toast
A good sturdy bread
Mashed avocado can be heavy, plus toppings, etc. you'll need a base that can support it! Sourdough, spelt, or whole grain bread is preferred. As long as the base is thick and it's been toasted into a golden-brown crusty bread.
Ripe avocados
It could take up to four days for the avocado to be ripe enough to eat once bought. Buying individual avocados at cascading stages works best, especially if avocados are a regular in your diet.
For better management, putting them in a brown paper bag or placing them next to onions will speed up the ripening process. Using green bags like these will remove ethylene gas and slow the ripening.
If the avocado has dark green skin and is soft enough that you can place an indent with your thumb, it's time!
A good habit to get into is washing avocados before slicing. The knife can contaminate the inside with whatever is attached to the avocados' skin, like pesticides or grocery germs.
Toppings
This is where the beauty of this toast comes in... the options are limitless! You'll never be bored with so many savory, salty, briny flavors to pair.
This is my fresh avocado toast formula in order of layering onto the toast - after the avocado spread.
🥑Microgreens - are nutrient-packed, fit nicely onto the toast, and bring a little crunch. Fresh herbs like fresh basil leaves or arugula are delicious if microgreens are unavailable.
🥑Tomatoes: heirloom is my favorite, but if not available, a beefsteak will cut perfectly into the width needed for a juicy bite.
🥑Pickled Veggies: banana peppers, red onion, sauerkraut, ginger, or radishes provide a fermented *tang* hitting the right flavor profile.
🥑Top Layer: watermelon radish is my all-time favorite topping - it's crunchy, fresh, and beautiful. Sliced peppers, broccoli, mushrooms, and chickpeas are also great options!
🥑Sauce: drizzle on your favorite sauce; we all have one - right? Whether it's sweet chili sauce, hot sauce, salsa, pico de gallo, teriyaki, etc., bring it to the party!
🥑Seeds: everything bagel seasoning is the reigning champion of the avocado toast toppings. It's salty, peppery, and perfect. You can opt for some red pepper flakes, garlic granules, or sea salt, or leave it plain.
Mashed vs. Sliced
Purely preference! Mashed gives a guacamole vibe, which you can then add in more flavors. While sliced is an excellent fresh option if you're not adding many toppings.
I won't give you a one-size-fits-all measurement of salt for the avocado mash - because it doesn't exist. Some tastebuds like it salty, and others prefer a lite sprinkle - you do you.

Redmond Real Salt (no affiliation) it's an unrefined, unprocessed, ancient sea salt with trace minerals and no additives. The flavor is superior and American-made, which in the world of food is a plus (less travel time, fresher).
If you're wondering, I mix in a ½ tablespoon.
Tips for success
🥑Garlic - lightly rub peeled raw garlic over the toast before adding anything! Or mix in one minced garlic clove to the mash. If fresh isn't an option, garlic powder, in my opinion, is a must.
🥑Acid - add a tablespoon of lemon or lime juice; this will prevent the avocado from browning and give the mix a clean, fresh citrus taste.

Go-To Avocado Toast Recipe
Ingredients
- 2 slices tomato (optional: lightly salt the tomato slices to enhance their flavor)
- ½ cup microgreens (broccoli or kale)
- ¼ cup pickled ginger or banana peppers
- Everything seasoning (poppy seeds, sesame seeds, and flaky sea salt)

Instructions
- Place the toast in a toaster until golden brown and firm.
- First take the ripened avocado and slice it lengthwise around revealing the pit. Place the halved avocado with the pit on a cutting board and strike a sharp knife into the pit to remove it. Rest the pit, attached to the knife on the cutting board and press down releasing it from the knife.
- Using a spoon remove the avocado from the skin into a bowl. Scrap the avocado from the skin (the flesh closest to the skin has the most nutrients).
- Add the garlic powder, paprika, salt, pepper, and mash with a fork until combined without lumps.
- Slice the tomatoes and add a slight amount of salt to each. Lightly chop the microgreens.
- Spread the avocado mash onto the toast in an even layer. Add the microgreens over top. Tomatoes, pickled ginger or banana peppers, everything seasoning and drizzle with your favorite sauce!
