What You'll Need
Sheet of puff pastry - homemade is an option but finding a pre-made to roll out from the store makes this recipe easy, breezy, and perfect for any summer evening treat.
Fresh sweet strawberries or any fresh fruit of choice - while I chose in-season strawberries, any fruit will do! Berries seem preferred, but peaches or pears would probably hit the spot!
Vanilla extract - berries & sugar bring the sweetness to this dessert, but a touch of vanilla seals in the warming flavor you'll love in each bite.
Lemon juice - not only does this help break the strawberries' natural sugars down it balances the flavors, so it's not too sweet.
A scoop of ice cream (optional but highly recommended, tip: french vanilla will make your toes curl!)

How to Make Easy Strawberry Puff Pastry Tart

- Allow the store-bought puff pastry to thaw per package instructions. Be sure to read the ingredients to ensure that it's vegan. The pastry brand I love baking with is linked here. You'll typically get two pastry sheets in a package; keep them separate for two pastry tarts versus one large rectangle.
- Preheat the oven per package instructions (350 degrees Fahrenheit). Once thawed, sprinkle some flour onto your work surface and roll the puff pastries out to ensure no sticking. Fold each edge of the pastry inward about one inch to create a barrier for the filling. Not totally needed, but if desired, you can brush the outer edge of the pastry shell with plant milk as an egg wash replacement. Transfer onto a parchment-lined baking sheet.
- Slice the fresh strawberries and add them to a small bowl. Add all filling ingredients to the bowl with the strawberry slices, stir until combined, and then transfer into the pastry square.
- Place tarts in the oven per recommended time, usually 15-20 minutes, until the edges are golden brown.
- While the pastry bakes, crack open the vanilla ice cream! Once ready, allow the pastry to cool, then using a sharp knife, cut into small squares and serve!
How to Store
Since this flaky puff pastry is easy to prep and bake, it's best to make it the day of. It holds well in the fridge for up to three days in an airtight container.
Set the oven temperature to 350 degrees Fahrenheit and pop the leftover tart in for a few minutes to reheat, then enjoy the flaky crust all over again!
